Any tips/tricks to get the email verification to not show up as junk/spam?

Mmh.. It shouldn't be considered as spam, did you configure an email address with your domain name in config.php (you can use an non-existent address the hostname part should ideally be real.

No, the first time I used a real (valid) email address. Those went to spam. I then tried admin@<my_domain>.com and those went to spam too.
I'll keep trying a few combinations, perhaps it's my Mac being "helpful" 
Success, maybe! I set it as "wordpress@<my_domain>.com" and it did not go to spam.
Yes because "admin@" may be also considered spam from some mail clients, usually I set "no-reply@<myserverdomain>.com" and never had issues.
